Through patience and persistence you will be successful with your very own and unique recipes of water kefir.
What you need:
3 Teaspoons of Kefir grains (store bought or from previous brew)
3 Teaspoons of good quality sugar
Slice of lemon
Pinch of bicarbonate of soda
1 Pint of cold water
1/4 Teaspoon molasses
Instructions:
Dissolve sugar, molasses and bicarbonate of soda in water. Add Kefir grains and lemon slice. Cover with breathable cover like tightly woven cloth or coffee filter and secure with a rubber band.
Let sit on the counter out of direct sunlight for 24-48 hours. The ideal temperature is about 76F. Give it a stir every now and then.
Strain the liquid into bottles with tight fitting lids (screw top wine bottles work well) and at this point you can add any flavor you want – berries, juice, sweetened flavored tea and so on. Screw the top on tight and keep refrigerated. It will become quite carbonated after a few days. Enjoy over ice!
Use the strained grains to repeat the process. I enlarge my recipe by at least 4x and still make new Kefir at least every 4-5 days.
